Basic Information

Tarhana is a long life foodstuff from the area of Asia Minor (variants are found in Turkish, Greek and Armenian cultures and others from the same area) consisting of grain/flour and some kind of fermented dairy product such as yoghurt. These are pressed into cakes and dried, with the various cultures having optional extra ingredients and seasonings. Being acidified and dried, these cakes last for a significant time and can be used as a travel food or stored for future use.

To be eaten, Tarhana is typically reconstituted with water into a thick soup, but can also be less thoroughly wetted and fried, or used as an additive and thickener for other kinds of soup or stew.
